Eleana Hsu

Eleana is a fermentress focused on transforming foods with the magic of microbes and koji – an ancient Chinese mold. What makes her most excited is creating new food products and flavors using secondary produce with traditional and non-traditional fermentation methods. Currently, she is participating in food popups, teaching koji fermentation courses and working to launch unique, great-tasting fermented food products in the Bay Area.
